Also will learn how to make Spaghetti! We will be in San Frediano, the school can be reached from any point of the historic center even by walking. We will provide you with the tools useful for the preparation: kitchen gown, rolling pin and pasta cutter, eggs and flour. We will show you how to cook sauces to season your pasta. During the experience we will offer you the wine that I produce in my organic farm, make with natural method. Wine will be served at mealtime. If you want to drink during the lesson you can buy some bottles at our shop before the class. After preparing the pasta, we will set a table and eat it together the pasta that you have prepared, like an italian family. To finish, we will also taste a delicious chocolate dessert. All of you will received the recipes with our secrets. Generally the course lasts 3 hours with about 12 people per group, we are pleased to meet you and let you spend a nice time with us for a fun and unique experience

After many experience in Michelin star restaurant in Italy and around the world, I decide to open my experience on Airbnb to share my passion for pasta. You will meet only the best chefs in town, all with Michelin start restaurant back ground, all with the same mission, share our experience and our family traditions, ready to share the love for Italian Gastronomic culture. We going to start with a little introduction to the ingredients, after that we are going to do the dough and you will be able to prepare you own pasta from scratch! I will teach you many different kind of pasta shapes as: -Tortelli -Tagliatelle -Fettuccine and a lot more :) A wonderful experience about the magical word of pasta. Of course, at the end we are going to enjoy together some amazing pasta dishes. I will show you how to prepare few different sauces for our amazing pasta! We will be taste 3-4 different pasta dishes! This Class is suitable for vegetarians. Please note: open classes would not be suitable for gluten free and dairy free, I’m sorry about that. You’ll be part of our crazy big family for a day and join us as we walk the tiny medieval streets of Palombara Sabina to Grandma’s kitchen, located in the old winepress where our great-grandpas used to make wine that the community tapped straight from the barrel (or in Grandma's home... according to the weather). We go underground where it is 16°C (60°F for us Yankees) a great way to beat the heat With over 300 km of underground tunnels surrounding Rome, even if you go out there alone, they will not let you go down by yourself, only with a guide to assure you don't get lost and become a permanent resident. With 10 years guiding experience under my belt, I will take you off the beaten path and bring ancient Roman society to life, telling the Stories behind the art and architecture. Showing you the masterpieces that you absolutely have to see before you leave Rome. We first go down to the Basilica that was built at the end of the 4th century AD above the tomb of the two martyrs Nereus and Achilleu. Then we will walk down further to the Best Preserved Catacombs of Rome. I will introduce you to the early Christian community of Imperial Rome, and of Catholicism in the city between the 2nd and 9th centuries. Ending near the Appia Antica where you are free to continue your Adventures. I will teach you how to make the real Italian pasta from scratch. We will make two italian traditional pastas: ravioli and fettuccine. In addition to making homemade pasta we will prepare different sauces: Tomato and basil, Amatriciana, Gricia, Butter and sage. I live in a 17° century building 50 meters close to Piazza Campo dei Fiori. I'll wait for you there, in one of the most ancient square of Rome to tell you welcome to this traditional experience. We'll have a short speach in my penthouse (with a 360 view of the Roma roofs) to break the ice and talk about roman cuisine, then I'll show you ingredients we'll need. Then the cooking class can begin! You will become a perfect italian chef in only 3 hours. When we are finished we will cook, eat, and savour our pasta together. I’ll tell you all the secrets for the italian handmade pasta and some tipa to replicate easy at home. Other things to note: We don't have a gluten free option, sorry. You will learn how to make many types of homemade pasta in a real laboratory of pasta, reviewed among the "best 10 pastificio in Rome" . We will start with handmade pasta, made with different kind of flours: like ancient grain Triticum Monococcum, Grano Saraceno (buckwheat) and wholemeal flour. We will do thin sheets dough, explanation of safe food cutting procedures, realization of three types of ravioli, tortellini, fettuccine with two typical Italian sauces. The experience includes a delicious tasting of local cheese and Italian Prosecco. We can also accomodate GLUTEN allergy guests and VEGAN guests for a very tasty fresh pasta. We will cook all pasta and the sauces made during the class, eating our different kind of pasta done, sipping good Italian wine. An express tiramisu preparation will follow as a dessert. Moreover, to all the participants will be offered complimentary, the exclusive Professional Chef Hat with logo of "Pastificio Faini". In additional to the regular program, everyday of the week a different version will be presented: Monday and Saturday Carbonara sauce; Tuesday-Wednesday-Thursday Friday- CacioPepe sauce; Wednesday. During my cooking class, you will be able to immediately immerse yourself in a familiar and informal atmosphere, also thanks to the warm and welcoming ways of Mamma Nora. Before you know it, you will find yourself with an apron around your neck and ready to be part of her kitchen! You will discover and learn the secrets of homemade pasta, how to prepare a good savory sauce to accompany it and make one of the most famous Italian desserts: Tiramisù. Of course the menu can change according to guests's requests. We will cook together using mainly our all organic products, starting from the eggs of my hens. we will use flours of ancient Tuscan grains and above all we will cook with seasonal vegetables as they did in the past. We will cook inside the old celler of the Farm, as it is the coolest place we could find in summer! We will visit the garden to pick up some herbs, and for the brave ones, there will be a visit to our chicken coop! Once finished working, we will set the table and we will finally enjoy our wonderfully prepared meals. Other things to note Please, bring a lot of joy! We'll start with a welcome coffee and cookies to get to know each other a little bit, then let's get our hands in the dough from scratch with flour and eggs, following my instructions, we'll do two different shapes of pasta. During this experience you'll be able to immerse yourself in my family long time farm history. It will be my pleasure welcoming you with a cup of coffee before visiting our cellar and garden where we'll pick some vegetables to use for the class. Then we'll jump to the kitchen and put our hands in the dough or, using an Italian expression, "mettere le mani in pasta". I'll explain and provide the ingredients needed, their proportions, the full process and methods included all the tricks and how to use all the necessary tolls. Then we'll prepare the sauce using ingredients from our farm, in particular our organic vegetables. After making the tagliatelle and ravioli , it will be time to make the typical Italian cake 'tiramisù' following the recipe of my great grandma. We are now ready to enjoy a delicious dish of handmade tagliatelle accompanied with a nice glass of our organic wine and finally the amazing tiramisù. This experience also includes a pice of our homemade limoncello. All the food will be prepared and served with our own organic extra virgin olive oil. At the arrival I will offer you cofee break, and I will give you a lab coat for the access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products. Explore the farm with ours kinds pets like truffle dogs, cat, chickens and pig (prosciuttina) and winery whit the owner winemaker and learn about the history of this 12th-century artisanal winery. You could be my model and create unique portraits with this technique. Light Painting is an art form of using torches to paint or draw in a scene while a camera shutter is left open during a long exposure photograph. You can also experiment and learn to create fantastic effects. You will also have the opportunity to use my professional tools: optical fiber, light tubes, sparkles! They will be easy to use and very fun! Once our photo tour is over, I will send you all the photos via email to share and/or print them! For this reason, it will be necessary to conduct a small briefing before going into the woods, a sacred place for truffle hunters. During the hunt, I will tell you about the truffle, the magic of its traditions, its history, mythology, and uses in the kitchen. You will learn how to recognize and distinguish a good truffle from other fake "truffles" of inferior quality. After the hunt, we will return home for a scheduled lunch or dinner, based on fresh, real truffles and served with our own wine and extra virgin olive oil. We will show you how to clean truffles and prepare typical truffle recipes, such as crostini al tartufo, tagliatelle al tartufo, and more.

Enjoy Fettuccine and Tiramisu making cooking class in the heart of Rome where you will learn how to make Fettuccine pasta from scratch and our famous Tiramisù from simple and fresh ingredients. You will discover the recipe and the secrets of this popular dishes and you will have the chance to ask questions our local chef expert in the Italian cuisine. Greet your chef at the established restaurant in the heart of Rome. Just wear your chef hat and your apron and you will be ready to work. First, you will start to make your own pasta from flour and eggs, the chef will show you which kind of pasta you can prepare with this recipe. Once the pasta will be ready, you will proceed to the Tiramisù making using all ingredients and tools needed. Immerse yourself in the Tuscan countryside with 3 different experiences! We will meet in Florence, an authorized driver will take you to our farm in just 35 minutes. What will we do? 1 - Walk among country fields, ancient olive trees and vineyards, enjoy the landscape, the plants, the explanation of our history, an occasion to take photos in the suggestive setting.
Maybe you will meet our funny domesticated pig! In September taste the grapes! 2 - Visit the cellar and taste 5 organic Tuscan wines: white & red, aged directly from the barrel, and "vin santo" a traditional sweet wine. Then you can taste olive oil, we will delight you with a short film about our mission. You have the opportunity to buy wines at cellar prices, or order them to ship. 3 The last part is dedicated to making fresh pasta, with Raffaella or Laura, they teach the secrets to make pasta like Spaghetti or Ravioli! The pasta will be mixed and cooked together with that of the others, it will not be possible to do individual cooking. Of course, we will eat them together at a long table as in an Italian family. During lunch will be served our wine. One of our co-hosts will make sure that you can be the protagonist! We will be about 16 participants. Transport by van, with driver, from Florence is included. We will get our hands dirty and we’ll prepare an appetizer and we will prepare a fresh hand/home made egg and flour pasta (e.g. tagliatelle, pappardelle), and a fresh and sweet Tiramisù. The experience will end by enjoying our meal and the deserved results of the hard work together!! We will meet in Florence and after getting to know eachother, we will head towards the hills of Florence. You will be able to see vineyards and the olive trees that are used to make our olive oil. Our first stop will be an authentic winery, We will show you the machinery used in making the wine and then you will be able to taste the cheese and have it paired with the farm's wine. Our next stop will be another Chianti farmhouse. We will stop to take some pictures while our cook will prepare a big spread for lunch, aswell as more cheese to taste. There will also be a first course, second course and gelato. The food will be paired with prosecco, sparkling rose and then some more reds.
