Toki Underground (1234 H St NE) is the best place in the city to get ramen. The wait is usually long, as the place is small and doesn’t accept reservations, so put your name down and go downstairs to The Pug for a beer while you wait.

This ramen house seats only 23 people, but the atmosphere and food are second to none. Have a drink at The Pug downstairs while you wait for your table.

Mostly, we’re here for Erik Bruner-Yang’s take on Taiwanese and Cambodian cuisines. An order of pork or leek-and-mushroom bao is a no-brainer, and spicy lamb noodles are an obvious temptation. That said, we can never say no to the fried chicken. Big enough for two or more, the extra-crispy breasts are livened with Szechuan peppercorns, pickled cabbage, and a heavy drizzle of sweet caramelized fish sauce that soaks into hunks of baguette.
