Join me in a fantastic cooking class, you'll be able to mix together flour and eggs the Italian way. I'll welcome you at the door wearing a mask. After washing hands, we'll have a coffee and small talk. You'll learn all the secrets to making the traditional fresh-eggs pasta and tips about the origin of our amazing food. I achieve a balance between demonstration and hands-on at the working station. We'll prepare two different pasta shapes and try to shape another three. Then you'll see me in the kitchen cooking and preparing the dishes. You'll sit at the table at a 1-meter distance from one another. In a few minutes, you'll taste what you have previously prepared from scratch, topped with different sauces. You can choose among meat menu - no pork Bolognese - vegetarian menu. Los secretos del parmigiano reggiano
At the arrival I will offer you cofee break, and I will give you a lab coat for the access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products. While YOU'll create all the different fillings, the proper sauce(and a surprise one, made right at the moment!). Then we'll have a break to taste 5+ different kind of cheeses and local aged ham. Guided and unlimited tasting it's necessary to learn a way to get a proper result that you will be happy to replicate back home. You will be immersed in a tasting experience (10 different kinds of aged vinegar) and understanding of the aging process of this Masterpiece of Italian culinary tradition. We'll start off with the cheeky secret hidden in the Fountain of Neptune! Then, we'll go to the biggest church in Bologna, Saint Petronius. After, just a short walk away, we'll go to the Archiginnasio Library, a spectacular demonstration of Italian Architecture. I'll take you to the Anatomical Theater as well; tickets are offered by me! A historical masterpiece, it's where medical students learned Anatomy, directly from the human bodies in front of them! (closed on Sundays) You can't visit Bologna without going to the Two Towers! I'll take you there and let you know the particular story that's behind its construction. After showing you some of my favorite spots, we'll go to Via delle Pescherie Vecchie, and enter into the world Bologna is famous for: food! Situated in the center, this street is filled with restaurants and markets. By now, you'll probably be hungry so I'll recommend the best Italian restaurants! Of course, we can't miss the university district as well, where we'll also head into the ex-Jewish Ghetto of Bologna. Don't forget I'll be your personal photographer as well, and I'll follow your pace the whole time! You will enjoy the special atmosphere that makes the district so special, lively and energetic while learning more about things you can’t miss when visiting Bologna. Ready to jump into the Tuscan’s hills?!Perfetto!! From my house in the heart of Mugello area and guided by Lupo, my fun and active cocker spaniel, we will walk into the tuscan’s woods looking for the most precious of the all gifts that the nature can give us: Truffle! In this moment we specifically will hunt the "Tuber Aestivium" known as Black Summer Truffle. I will take you to my secret spots to find as many as we can, if we find them! Once we are done hunting, we will come back to my house (where truffles are always in the fridge!!) and we will cook together a 3 courses meal, all with Truffle: -a starter; -pasta o gnocchi o risotto; - a dessert. Making lunch we will follow some of my grandma’s centenary recipes with truffle. The menu changes according to the season and the fresh products that I have available in the farm or in the local organic farm around me. I truly believe in the “farm to table” concept and that’s what you will find here. Truffle hunting in Italy has been recently recognized by the UNESCO as an Intangible Cultural Heritage: come and join us in this great, fun and wonderful adventure, part of the Italian culture and history.

Aprende a hacer pasta casera de forma fácil y exitosa. Nos encontraremos en Florencia en nuestra escuela de cocina ubicada en el centro histórico, de fácil acceso, a 5 minutos del río Arno. Somos un equipo de chefs profesionales, estamos encantados de conocerte y dejar que pases un buen rato con nosotros para una clase divertida y única. Te enseñaremos los secretos a hacer RAVIOLIS, FETTUCCINE o ESPAGUETIS y TORTELLI en diferentes condiciones. Te proporcionaremos las herramientas útiles para la preparación: bata de cocina, alfiler enrollable y cortador de pasta, huevos y harina. Después de la preparación, te mostraremos todos los pasos necesarios para la preparación de salsas como "Pommarola" y "Ragù alla bolognese". Al final pondremos la mesa y comeremos todos juntos la pasta que has hecho, con 3 salsas diferentes, como una verdadera familia italiana. Seremos unos 12 participantes, la experiencia dura unas 3 horas. También será una oportunidad para socializar con otros viajeros y con tu anfitrión en un ambiente italiano. Begin by preparing the dough for tagliatelle or tortellini, and then roll it out and fill it before baking. Learn how to prepare the dough for the ravioli and how to fill the ravioli as well. You will make the ragu` ( bolognese meat sauce) and two kinds of hand made pasta: tagliatelle and Tortelloni ( you will learn to fill them with ricotta cheese, Parmigiano Reggiano, garlic, parsley, nutmeg, white pepper and salt) At the end, it will be served a local dessert (prepared in advance) and of course water and wine (1/2 bottle each participant ) You will be hosted in a tiny, cozy apartment in Bologna. The kitchen is small but this tiny environment will make your class even more authentic. There is no elevator and your host is at the third floor. Other things to note

Fase 4 cottura tortellini e tagliatelle, impiattamento e assaggio . Fase 5 rilascio taccuini con ricette effettuate nel corso. El Parmigiano Reggiano al descubierto
All'arrivo dopo una breve introduzone sulla storia del Parmigiano Reggiano, vi fornirò tutto il necessario per l'accesso alla lavorazione (camice, cuffia per capelli, copriscarpe, guanti ) . Vi condurrò attraverso un percorso completo alla scoperta di tutte le fasi della creazione del Parmigiano Reggiano. Entreremo all'interno del nostro caseficio durante la lavorazione del latte e assiteremo alla cottura e alla realizzazione delle forme di Formaggio. Vedremo poi il processo di salatura e di stagionatura fino ad entrare nel gigantesco caveau al cui interno sono custodite migliaia di forme di formaggio impilate su immensi scaffali a perdita d'occhio e dove il profumo del formaggio ci inebrierà fino a non poterci far resistere all'arrivo dell'assaggio dei formaggi e prodotti tipici locali . Visiteremo anche i luoghi in cui gli animali vengonno allevati e dove il latte viene munto. Altre cose da tenere a mente Se arrivate in treno posso fornirvi il trasporto da e per la stazione su minivan privato dotato di aria condizionata. We'll start off with the cheeky secret hidden in the Fountain of Neptune! Then, we'll go to the biggest church in Bologna, Saint Petronius. After, just a short walk away, we'll go to the Archiginnasio Library, a spectacular demonstration of Italian Architecture. I'll take you to the Anatomical Theater as well; tickets are offered by me! A historical masterpiece, it's where medical students learned Anatomy, directly from the human bodies in front of them! (closed on Sundays) You can't visit Bologna without going to the Two Towers! I'll take you there and let you know the particular story that's behind its construction. After showing you some of my favorite spots, we'll go to Via delle Pescherie Vecchie, and enter into the world Bologna is famous for: food! Situated in the center, this street is filled with restaurants and markets. By now, you'll probably be hungry so I'll recommend the best Italian restaurants! Of course, we can't miss the university district as well, where we'll also head into the ex-Jewish Ghetto of Bologna. Don't forget I'll be your personal photographer as well, and I'll follow your pace the whole time! I will bring you to the typical and local food markets. We will go shopping in the best food shops of Bologna, where usually locals go. We will taste local salumi, local cheese and home-made pasta, and local wine of course! We will go also to a special ancient indoor market, where you can buy specialities of the town to bring home! I will suggest you what to but and how to cook it. We Will also have amazing gelato! You will enjoy the special atmosphere that makes the district so special, lively and energetic while learning more about things you can’t miss when visiting Bologna.
