I was born into a farming family in Miyagi Prefecture, north of Tokyo. I joined the family business of creating traditional organic and fermented foods, and recently opened my own miso shop. I’m passionate about food and am eager to share my knowledge about miso and other traditional Japanese delicacies.

We’ll spend the afternoon learning about and preparing traditional Japanese miso—a flavorful paste made from fermented soybeans. Our morning will begin on one of my favorite shopping streets in Setagaya, a special district in Tokyo. We’ll explore the area, chat with locals, and purchase top-quality ingredients before returning to my workshop in the center of town. Once there, I’ll walk you through…

Setagaya is known for its peaceful, residential ambiance, despite being in the center of Tokyo. We’ll meet at Shōin Jinja-mae train station and walk to the shopping street together. Later, we’ll head to my workshop in the center of the district to cook, eat, and learn about the art of miso.
